Dutch Cheeses and Cooperative Wines

Barbara Hart, a gastronomic consultant, cheesemaking specialist and webmaster of the www.barlactica.nl site, dedicated to technology and research, will be presenting the best of Dutch raw-milk cheese production at Cheese 2011. She'll be bringing cheeses from three producers: two cow's milk cheeses from the biodynamic farm De Hondspol, in the center of the country; two organic goat's milk cheeses from De Kruidenwei in the north, including Lady's Blue (which won an award for best Dutch cheese in 2010); and finally an example from the Aged Artisanal Gouda Presidium. The cheeses will be paired with Italian and Spanish wines from two cooperative wineries, Paterna (Colli Aretini) and L'Olivera (Costers del Segre).
