As always, sustainability, quality and respect for the whole supply chain are central; bringing together cheesemakers, herders, dairy farmers and affineurs who work with patience and passion to enrich the precious flavors and aromas that elevate these characteristics.
Wandering through the market you are confronted with the main focus of this years event: taste fresh and aged cheeses from young herders and cheesemakers who, step by step, are rebuilding mountain milking practices and restoring the many specialties of this year’s host country: Spain.
